What’s In Your Lunch Bag?

The colder weather is forcing us to rethink our lunch for something a little warmer, but it’s NEVER too cold for cake!  And no lunch box or bag would be complete without it!

So as to not indulge too much, we’ve been on the search for something yummy but healthy before whipping up some more naughtiness inspired by next week’s batch of goodies to be whipped up on screen next week by the team.Hence why we’ve turned to Elisha Wildblood who’s amazing website is a place filled with wholesome and delicious recipes alongside inspiring articles on raising healthy and happy kids, and taking care of yourself while you’re at it.

Her banana loaf is sweetened with bananas; it’s high in protein, fibre & healthy fats (and totally yum!). Coconut flour can be found in most supermarkets these days or alternatively check your health food store.

This loaf is great in lunch boxes however, it can be served for breakfast or as an after dinner treat.

Banana & Coconut Loaf 

3 ripe bananas
3 large organic eggs
1/4 cup of coconut oil
sprinkle of cinnamon
sprinkle of nutmeg
2 teaspoons of baking powder
1 cup coconut flour

1/4 cup frozen blueberries or raspberries (optional)


Preheat oven to 170′ fan forced

In a large bowl mash the banana and add the cinnamon, nutmeg, oil and baking powder.

Crack the eggs into a small cup and whisk lightly then add to mixture.

Combine well until it resembles a creamy mixture.

Sift the coconut flour in and mix it through completely.

If using frozen berries fold them through gently in last step or even once the mixture is in the loaf tin to ensure they stay firm.

Prepare a loaf tin with either baking paper or butter/oil. (I use silicone pans which don’t require any preparation.)

Pour the mixture in and bake at for approximately 1 hour.

{Check regularly after about 40 minutes as ovens can vary greatly}

Put a skewer in and if it comes out clean, it is done

* If you are not making this for a nut-free environment, you can add some chopped walnuts to the recipe instead of berries.
